Spiny Artichoke

One of the oldest cultivated vegetables in the world, Cynara scolymus, commonly known as the Artichoke, is chock full of antioxidants and helps with everything from digestive problems to high cholesterol. The variety used in all Key Essence products, the spiny artichoke, is named for its sharp and pungent spines on the end of each leaf.

A native plant from Sardinia, it is particularly high in beneficial lignin. Endless fields of artichokes can be seen in the winter in the vast farmlands near the seaside. Artichokes left unharvested blossom into stunning violet blooms as summer approaches.
